Christmas baking is my favorite type of baking.
My mom – with the help of my sisters and me – bakes a dozen different types of cookies starting in early December to use as gifts and to serve friends and family at holiday gatherings.
This tradition made me even more excited to participate in the cookie swap with the Real Farmwives of America (and Friends). First, I want to say “Thank You” to Liz over at Two Maids a Milking for the delicious Cranberry Treasure Cookies.
It was so sweet of her to incorporate my experience working with cranberry farmers out in Massachusetts into her cookie selection for me.
So when it was my turn to flip through Gooseberry Patch’s Online Recipe Box to find the perfect recipe for Jane over at Going Jane, I knew I had to pick a recipe that I thought fit her to a T.
And I think I found it…Buckeye Brownies! Not only is Jane from Ohio, but I KNOW that she loves chocolate and peanut butter. Put them together and it’s a perfect treat.
So, let’s make some brownies! Gather the ingredients (less than eight items and you probably can find them all in your pantry).

I got distracted while making these so excuse the lack of photos!

Make up your brownie mix as directed on the package. The recipe calls for a 13×9 pan but I used a square pan and they worked just fine!

Let the brownies cool and mix up the peanut butter layer (peanut butter, powdered sugar and butter).

Spread that over the cooled brownies.

Refrigerate it until the peanut butter layer is firm.

Melt chocolate chips and a little bit of butter and spread over the peanut butter layer. Leave it alone so the chocolate can set (this is really hard).

Cut into squares, put them on a festive holiday plate and share.

Jane, hope you enjoy these as much as my co-workers whom I shared a plate with…two of them immediately emailed me for the recipe!

Here’s the recipe…all nice and tidy.

Buckeye Brownies

19-1/2 oz. pkg. brownie mix
2 c. powdered sugar
1/2 c. plus 6 T. butter, softened and divided
8-oz. jar creamy peanut butter
6-oz. pkg. semi-sweet chocolate chips

Prepare and bake brownie mix in a greased 13″x9″ baking pan according to package directions. Let cool. Mix powdered sugar, 1/2 cup butter and peanut butter. Mix well and spread over cooled brownies. Chill for one hour. Melt together chocolate chips and remaining butter in a saucepan over low heat, stirring occasionally. Spread over brownies. Let cool; cut into squares. Makes 2 to 3 dozen.
