I love macaroni.  It is one of the meals I could eat everyday for the rest of my life. I make it at least once week in our house.  I’ve blogged about another macaroni recipe that was such good comfort food. The Farmer makes it whenever he is in charge of supper too!  I don’t make the blue box kind either.  I do homemade mac and cheese.  I think it tastes much better!

Over Christmas break, the kids went to their grandparents for a few days.  And while I could have used the time to sleep in, I decided instead to do some freezer cooking. I was able to crank out 23 meals in one day!  Pretty exciting and exhausting.

One of my favorite freezer dishes is my Crock-pot Mac ‘n Cheese.  I doubled the recipe and froze one 9×13 pan and used the other one for The Farmer’s and my dinner that night.

The ingredient list is simple.

Cook macaroni noodles as per the package directions. While it is cooking, add cheddar cheese soup, the sharp and extra sharp grated cheese, evaporated milk and skim milk to the crock-pot. Stir to combine. When macaroni is cooked. drain and add to crock-pot.

Stir to combine all the ingredients. Cook on low for 3 hours.

After you get it cooked through, you can either freeze it in 2 gallon storage bags, a 9×13 freezer pan or eat it!

If you freeze the mac ‘n cheese, when you do decide to pull it from the freezer, you will need to thaw it completely, put in a greased 9×13 baking dish (can be the freezer pan you froze it in), and bake, uncovered, at 350 for 30 minutes.

If I am using this as a main dish, I like to add chopped up ham or chicken before putting it in the oven.  I’ve also stirred in cooked ground hamburger or sausage for a yummy main dish!

My whole family loves this.  It’s easy and so good!

 

Crock-pot Mac 'N Cheese

Crock-pot Mac 'N Cheese

Ingredients

  • 16 oz dry macaroni
  • 10 oz condensed cheddar cheese soup
  • 8 oz grated sharp cheddar cheese
  • 8 oz grade extra sharp cheddar cheese
  • 12 oz. evaporated milk
  • 1 c. milk

Instructions

  1. Cook macaroni according to directions.
  2. While macaroni is cooking, add soup, grated cheeses, evaporated milk, and milk to crock-pot.
  3. Stir to combine
  4. When macaroni is done cooking, drain and add to crock-pot
  5. Stir to combine everything
  6. Cook on low for three hours
